Chocolate Coconut Slices:

These moist chocolate coconut slices are quick and easy to make. These cookies taste just like a Mounds bar. This recipe is great for a snack to keep the kids quiet after school!!!

Chocolate Coconut Slices Ingredients:

  • 2 ounces unsweetened chocolate, melted and cooled
  • 1-1/2 cups all-purpose flour
  • 1 cup confectioners’ sugar
  • 1 egg
  •  6 tbsp  butter, softened
  • 3 tsp vanilla extract
  • 1/2 tsp baking soda

For Filling:

  • 1 cup flaked coconut
  • 1/2 cup finely chopped pecans
  • 1/3 cup cream cheese, softened
  • 1 tsp vanilla extract

How to make Chocolate Coconut Slices;

  • Place butter and confectioners’ sugar in a small bowl.
  • Beat until light and fluffy.
  • Beat in the egg, chocolate and vanilla.
  • In a separate bowl, combine flour and baking soda.
  • Gradually add to creamed mixture.
  • Mix well.
  • Refrigerate for 1 hour or until set.
  • In another bowl, beat cream cheese and vanilla until smooth.
  • Stir in pecans and coconut.
  • Refrigerate for 1 hour.
  • Shape dough into an 8-1/2-inch. x 6-in. rectangle.
  • Shape coconut mixture into an 8-1/2-inch. log.
  • Place coconut log on the dough.
  • Wrap dough around filling, sealing the seam.
  • Wrap in plastic wrap and refrigerate for 2-3 hours or until firm.
  • Cut into 1/4-inch. slices.
  • Place 2 in. apart on parchment paper-lined baking sheets.
  • Bake at 375 degree F,  for 10-12 minutes or until set.
  • Remove from the oven.
  • Allow to cool completely.
  • Chocolate Coconut Slices are ready to serve.
  • Enjoy!
